Seriously, how fun is this? Whenever I have a group I am getting together for something I use www.evite.com I have always found it to be so handy and helps me keep track of RSVP's, sends reminders for me, etc... Anyway, they have a drink calculator where you can calculate number of guests, drink preferences, heavy/moderate drinkers... Pretty handy.
